A savory stir-fry made with sliced liver cooked together with fresh vegetables like carrots, green peppers, onions, and cabbage, then served alongside boiled matooke. The dish is slightly saucy, and packed with nutrients.
Liver (beef liver) can use goat
Carrots (julienned)
Green bell pepper (sliced)
Cabbage (shredded)
Red onion (sliced)
Garlic (sliced)
Fresh tomatoes (sliced)
Butter
Salt
Optional spices (like black pepper, paprika)
Fresh herbs (parsley, cilantro, or fresh celery chopped)
For Serving
Green bananas (boiled, for serving)
Prep the ingredients

- Wash and slice the liver into thin strips.
- Chop all vegetables as shown (julienne carrots, slice peppers, shred cabbage, etc.).
- Peel and boil green bananas until soft; set aside.

Cook the vegetables

- Heat butter in a pan.
- Add garlic and onions; sauté until translucent
- Add tomatoes and cook until they soften into a light sauce.

Add vegetables

- Toss in carrots, cabbage, and peppers.
- Stir-fry for a few minutes until slightly tender but still crisp.

Cook the liver

- Add the sliced liver.
- Stir and cook for about 5–8 minutes until the liver is fully cooked (avoid overcooking to keep it tender).

Season

- Add salt and any spices or seasoning cubes to taste.
- Mix well and let everything combine for a couple more minutes.

Finish and serve

- Sprinkle fresh herbs on top.
- Serve hot with boiled Matooke on the side.
