Ginger Biscuits

 1 Egg, Beaten
 111 g Butter, Melted
 255 g Self-raising flour
 2.50 ml Baking powder
 255 g Sugar
 5 ml Ground ginger powder
Method

  • Preheat the oven to 180°C (160°C fan) or 350°F.
  • Grease a baking tray or line it with baking paper.
  • In a mixing bowl, beat the egg and sugar together until well combined.
  • Stir in the melted butter.
  • In a separate bowl, mix the self-raising flour, baking powder, and ground ginger.
  • Add the dry ingredients to the wet mixture and mix to form a soft dough.
  • Roll the dough into small balls and place them on the baking tray, leaving space between them.
  • Bake for 12–15 minutes until golden around the edges.
  • Allow the biscuits to cool on the tray for 5 minutes before transferring to a wire rack.
  • Makes about 18–24 ginger biscuits.
